[Food] My Breakfast Creation of BOH Green Tea Latte

Thanks to all my Insta family who shared your idea with me to create a breakfast recipe using BOH Green Tea Latte. Besides than you guys amazing ideas, this recipe is also actually inspired by my go-to snack at 7-11 whenever I travel to Thailand. To be honest, this is my first time trying out this recipe and I am so glad that it's turn out so successfully and taste yummy too.

Personally, I love eating something sweet at breakfast to boost up my low-blood sugar. This recipe is not too sweet and airy so it won't be too heavy or overwhelming as breakfast. I called this as Latte Pan-Cake Sandwich, which means it's a cake but looks like a sandwich. Latte Pan-cake Sandwich is a combination of soft sponge cake with green tea spread filling and adzuki beans (red beans).

Since this is also my entry for BOH Green Tea Latte Breakfast Search, I am using BOH Green Tea Latte instead of matcha powder to create this recipe. And guess what?! It turns out great! Scroll down for the recipe. 💋






Latte Pan-Cake Sandwich
#BOHGTLBREAKFASTSEARCH

Prep Time: 35 minutes
Cook Time: 8-10 minutes

Ingredients:

Cake:
3 egg yolks
3 egg whites
1/4 cup fine sugar
1/2 cup cake Flour
3/4 sachet of Boh Green Latte
2 tablespoons melted butter

Filling:
Green Tea Spread
Canned Red Bean Filling
(both available in Korea/Japanese Grocery Stores)



Method:
1. Preheat oven to 230 Celsius or 440 Fahrenheit. Line and grease a 10″ x 12″ rectangle pan.

2. In a clean bowl, beat the egg whites with half of the sugar until stiff peak.

3. In another bowl, beat the egg yolks with another remain half of the sugar until thick and pale.

4. Sift the flour mixture. Then separate into four batches to fold in the flour mixture and melted butter into Bowl No.2 (egg yolk mixture) until no lumps.

5. Separate the egg white mixtures into three or four batches, gently fold to combine using a spatula. *keep the mixture light and airy*

6. Pour the batter into the prepared pan and bake for 8 - 10 minutes until an inserted skewer comes out clean. Turn out onto wire racks covered with clean tea towels and allow to cool completely.

7. Remove the cake from pan and divided into half. Apply green tea spread to one side, red bean filling to another side. Then close both sides together into one.

Some verdict about BOH Green Tea Latte. If you love ordering this drink at the cafe, then you definitely should try out this. This surprisingly tastes as good as what you can grab at the cafe. It is smooth, milky with a kick of matcha taste. It a good alternative for coffee. 🍵
